Aruna's amazing chicken! Take six to seven pieces of (lowfat, boneless, skinless--saves us aliens a lot of trouble) thin pieces of chicken breast. (you can keep it as is, or _have it_ cut into 2" pieces. 2. Mix together in a bowl: 2and a half tablespoons soy sauce 2 and a half tablespoons lime juice 1 heaped tablespoon of grated ginger half teaspoon salt 1 heaped tablespoon of grated garlic half a teaspoon turmeric finely chopped shoots, and bottom of 3 spring onions (use 3 sprigs of spring onions) 1 heaped teaspoon of coriander powder 3. Slice 5 green chillies real thin. 4. throw the chicken pieces in the marinade, and keep for an hour or so, truning after half an hour. (you can cook your fried rice or else in the meantime) 5. Heat 4 tablespoons of oil (add more if necessray, later) 6. While hot and smoky, add the green chillies (turn the exhaust on, the goddamned smoke and hot vapors, are horrible), and fry them till a light brown; remove just the chilli pieces from oil. 7. In the same oil, put the chicken pieces marinade and all, and fry the daylights out of them till all the liquid evaporates, and constantly stir it; cook till all that is left are sizzling pieces of roasted chicken (golden brown colour). Throw the fried green chillies in now, stir and serve hot over fried rive, or on a bed of lettuce, with some peanut sauce. Peanut sauce: Dry roast a clove of garlic, a handful of peanuts (don't roat if peanuts are already roasted), 2 red chillies. Grind the above with half a teaspoon of raisins, salt, and a little lime juice, and half a teaspoon of sugar. Serve with Kozhi. Aruna
