Here's a nice recipe for potato chops: Wash 4 small-medium ptatoes very well, and slice 'em into pieces half inch thick (the resulting pieces are either imperfect circles or ovals) Heat a cup of oil in a small frying pan. While that is going on, mix some salt and turmeric powder with the potatoes, and let it hold thta way until the oil is hot enough to fry. Deep fry these pieces batch by batchuntil a golden brown, and well cooked (each piece must be well cooked in the centre) keep the pieces aside grind togehter in the food processor, half an onion, 3 cloves of garlic, a piece of ginger, a few stalks fo cilantro, a few pieces of cinnamon, and 2 teaspoons of saunf (fennel seeds). When well ground, add salt, and a teaspoon of tomato paste and mix well (you may add a little water while grinding). Add half a teaspoon of red chilli powderto this. Smear the ground mixture over the fried potato pieces, keep aside for 5 minutes. heat a third of a cup of oil in a wok/vessel, add mustard seeds. Whenthey crackle, add the potto mixture with all the ground stuff. Fry the daylights out of this mixture till alll the water evaporates and you have this potato thing with the roasted masala sticking all around it, garnish with cilantro. See you Aruna
